Regardless, it sharpens my Shun knives extremely well and extends the life of a professional sharpening. **Q: My knives are supposed to be sharpened at 16 degrees. What is the angle of the included angle guide?** A: It says 18 degree angle but that is for people that are just starting out. So I am sure you should not have a problem with the 16 degrees you need for your knife **Q: Can you remove the logos on top of the whetstones?** A: Dear customer, according to other customers' feedback, the newest version of whetstone's top and bottom are blank, there will be a paper logo wrap up instead of printed logos. So do not worry about removing logos. **Q: How do I use the strop?** A: Sorry I took so long to answer this. You want to attach one end of the strop to something that won't move. Take the slack out of the strop with your non-dominant hand. Slide your knife back and forth on the strop leading with the back of the blade. This will finish off your sharpened edge and if you use polishing compound will polish.
