I don't hand-dry anything, so my solution was to buy a rack for holding file folders (like several upside-down u-shaped metal pieces attached at the bottom to a base). Because the rack has fairly wide holders, I can slip the bags upside-down over them and they stay open while any water drips out and they air-dry. That said, there is some evidence that silicones are more likely to leech into oils, so for long-term storage avoid fatty foods and generally do not use to store oils or very oily foods (to be safe). 2) food grade silicones are remarkably resistant to heat, however, again, you likely want to avoid oils and fats and even more so when hot - heat can increase the rate of leeching (think about how much faster salt dissolved in hot water than cold) 3) silicones are highly reusable and are almost certainly a better choice for the environment, SO LONG AS YOU REUSE THEM FOR YEARS. And I mean on the order of decades, maybe even passing them down to your children. Silicones are highly persistent (they don’t break down), so to make sure we as a society don’t replace one form of trash with another, it is vital that reusable materials like silicones be used for their full lifetimes. However, as others have discovered, they can be difficult to seal... especially, after washing and drying. PRO TIP: If you apply any type cooking oil to the closure seal grooves, you won't have an issue closing the bags.
