They came out of the jar in whole pieces, they were moist but not mushy, and were ready to go directly in to my stuffing. ( We had a goose) The flavor is very good, as was the texture. I will definitely purchase more, I especially like the fact they are in a sealed glass jar, and you can see exactly what you are getting. They also have a fairly long shelf-life, so that is another plus.
