I'd not heard of it either, but mouthwatering, I had to find out. Its a strong rich flavour that is somewhere between piccalilli, mango chutney and a kind of curry sauce fenugreek note. There is a background sharpness, a little kick of heat, and a full bodied flavour filling middle that perks up the most mundane of sandwiches, wraps, shawarma and kebabs. Don't use a lot because it can be a little overpowering, like using too much mustard. Its flavours circle in the same party as kebab and curry spices, making it lift and help with any of that kind of dish.
