Review: So far, very nice . Easy to peel Hard-boiled eggs. - I got this because I don't want to get a big 'insta pot'' but I heard that pressure cooker hard-boiled eggs are easy to peel. It does really work. I think the build quality, fit and finish seem excellent. It's a clever mechanism for sealing the lid as opposed to the heavy, cast aluminum, interlocking teeth and twist on pressure canners I've used before. The method that works for me is put the eggs inside on a reck, with 1 cup water, seal up the lid, get it boiling. Once steams coming out the vent, put their little weight on there. Once it vents, they call it a "whistle", I'd call it more of a blast. It's a little terrifying. Steam shoots out in 4 different directions. I would not want the kids next to it when it was cooking. Once the weight is on, time 3 minutes, shut off the heat for 10 minutes let it cool and then put the eggs in ice water. Once they've cooled off enough to handle crack them and they slip out amazingly easy. Try it, you'll like it.

**Q: Can you fry chicken in it**
A: It’s like any NO COVER cooking pot you can deep fry/roast with it..just remember to adjust heat accordingly.  
***Remember:  Aluminum pot material conducts heat and raises oil temperature quicker compared with steel pot material.

**Q: Would like to use this for canning. How many quart jars will fit in the 8 liter pressure cooker?**
A: All things equal it would depend on the jars dimensions on how many you can fit.  Standard measure conversion 1 liter =1.05669 US quart. Hawkins instructions/recipe book has a Sterilization method applicable to my aluminum 5 liter with exceptions in: How to cook in it, releasing pressure, separator cooking, cleaning/care, and adopting recipes.  I would recommend to find documentation for use of the 8 liter from the manufacturer Hawkins. It’s a different experience for each person and product type.

**Q: The safety plug blew out of the lid.  Can this be replaced, or must I throw the whole thing away?**
A: You can replace safety valve.

**Q: What's the difference between classic the blue label one?**
A: I looked in the comparison of products on Amazon. It seems that the blue label is a newer model than mine with a more thick bottom.
Else it don't seem there is a lot of difference. Good luck with it.
