Scanpan was the leading favorite, but didn't make a suitable replacement for my 13" wok pan with a wider-than-usual bottom. Along the way, I used a ceramic-finish pan of unknown origin at a vacation rental home. That led me to DaTerra and I thrilled with the result. Easy to clean (inside AND out) and smooth nonstick finish makes even eggs easy to cook and clean. We love it so much we use it for smaller batches and just ordered the 3 quart saucepan. Wish they also made a smaller pan for sauces (1 Qt or 1.5 Qt). Note that these pans are much lighter in weight than our old Calphalon because it’s aluminum. The lighter weight is an advantage for me, a potential consideration for others, tho the multiply construction gives me confidence in this product.. Oh, and that glass lid? Love the look but it's also practical since the flat style is MUCH easier to store than the usual convex shapes.

**Q: Will acid like lemon juice or wine affect the coating?**
A: No. I left a pot with water to boil eggs on the stove and forgot about it for 6 hours. The water was gone and the pot was black. I washed it so easy and you could never tell anything happened. Pot still looks like new. These are amazing pans. I did a lot of research to find these. Every time they come out with a new one I buy it. Want to have them all.

A: Sure. It has a flat bottom so should not be an issue.

We love them, easy to clean as long as your mom doesn't put them in the dishwasher. Then the food starts to stick and the non stick surface starts to get pitted. Great non-stick wok, works well on my electric range. It heats up quickly and responds really well to micro adjustments in temp. I’ve had a very easy time pushing high heat with a few batches of stir fry and fried rice. The wok heats very equally and maximizes its surface area heat transfer. Max setting on my electric range is about a 7-7.5 depending upon how full the Wok is. This has been the best Wok so far… I had a hexclad wok and food stuck almost immediately.
