## Description

Palmetto Farms Stone Ground White Corn Grits, Tradition in Every Bite Since 1934. At Palmetto Farms, our stone ground grits are made from premium non-GMO corn selected specifically for its flavor profile. The grain is slowly ground in a traditional stone mill so that it retains all the natural oils and vitamins. When Palmetto Farms stone ground grits are cooked, they are smooth, creamy, delicious, and full of that rich natural flavor. There is no chemical processing, nothing added, and nothing taken away. Real stone ground grits are "speckled" and will always contain small specks of corn bran and tip cap. Over 80 Years ago, in 1934, James Graham started milling corn for his family and local customers in Horry County, SC. Today, the tradition has been passed on through James' grandson David and his 2 sons, Andrew and Devin, placing Palmetto Farms in its 4th generation of being family owned and operated. Palmetto Farms offers the same quality products that have been produced here since the beginning. Our Grits are naturally gluten free and produced in a wheat free facility. Try a bag of our grits today, we promise you will be amazed! Savor the authentic Southern flavor with our eco-friendly, stone-ground white corn grits. Crafted from non-GMO corn using traditional milling methods, our grits deliver a rich and creamy taste that’s been cherished for generations. Now in convenient, resealable packaging! Perfect for a wholesome, hearty meal any time.

Review: Perfect! - These are the BEST grits I've ever tried. My husband, who grew up way outside of the Deep South, loves them too. Another reviewer very kindly left us his wife's recipe for them, which I used with grateful thanks (we add a bit of butter and grated orange cheese to ours, with more milk if need be to keep the consistency gloopy). It's not that big of a sack, but you won't be using all that much at a time (1/2 cup of the dried grits makes rather a lot--two people who are very hungry and not eating much else will be happy with it, or it'll serve four people eating other stuff besides the grits; you can refrigerate what's left over and fry it in slices later if you want, but my household never gets that far). If you've never had grits, think of these a bit like polenta. If you've never had polenta either, then think of these a bit like very coarse cornmeal (which grits essentially are). They cook up very slowly (about 20-25 minutes) and have to be baby-sat a bit with stirring or they'll stick something fierce to the pan. But the patient and faithful cook will be rewarded with a smooth, rich flavor of corn and beguiling texture that sits well with anything you care to serve with it--from shrimp to breakfast trimmings. It can be a backdrop in similar fashion to rice and used very nearly identically (in my experience), and corn's versatile enough that it can go either sweet or savory depending on how you fix it and what you serve it with. Make it a porridge with maple syrup or brown sugar and eat it like oatmeal, or top it with fried onions and peppers and some slices of good sausage. Or just put some butter on it and be happy. Grits are incredibly easy to cook as long as you can handle the requirements for babysitting, so they're well worth getting to know if you've not had the pleasure until now. And if all you've known up till now are the ghastly instant sort, these ought to convince you to stay away from that foul stuff from now on. I'm very happy with these and will be buying them from now on. Excellent quality. 100% happy with them and the price I paid for them.

## Questions & Answers

**Q: Where is Palmetto Farms**
A: I have been to Palmetto Farms grist mill in the late 1990's. I still have my stone ground corn meal and I prepare it just like you prepare grits. I also had some of the grits I purchased there. I have found nothing like it here in Mobile, AL, so when I purchase them I freeze them and they last "forever"! I will be needing to replenish my supply soon, so I will surely be purchasing both the meal and grits from them (I am a widow and so mine last a "long" time)

**Q: I've read everywhere that good grits should be keep in the refrigerator of freezer. Do these come in a styrofoam box frozen when they leave the plant?**
A: The grits come in a plastic bag, which is enclosed in a burlap type cloth sack with a twist tie. I just store them like that in the freezer.

**Q: Are these bolted or un-bolted?**
A: These are un-bolted (un-sifted)

**Q: Are these hominy grits? To me, corn only would be polenta, not grits.**
A: Yes,this would be polenta or in the Old South and Southwest, cornmeal mush. This is just stoneground cornmeal. Grits, in the Old South, is dried ground hominy. I have helped my Grandmothers make hominy and grits. The nixtamalization of corn releases niacin that the body can use, which it can't extract from plain corn. Traditional hominy is made with wood ashes to remove the husk. Lye can be used and is SAFE if the hominy is properly washed. Limewater is used to make the Mexican masa. When Southern people stopped eating hominy and hominy grits, the disease known as pellagra became epidemic in the late 19th and early 20th century. This was caused by a diet consisting largely of not nixtamalized corn. The Mexicans discovered this process almost 5,000 years ago, thereby making corn a valuable primary food source. Thank Quetzacoatl for Mexicans.
