**Q: Why exactly are these mesh screens/mats smaller than the stainless steel tray itself? Why are they not the same size like the fruit roll up trays?**
A: They sit on top of the stainless trays because they are too flexible to use by themselves.

A: They are plastic.  The description is confusing I agree.  It’s referring to the stainless steel dehydrator, not the sheets for sale.   They are rigid and hold well

A: Width is 12 inches 
Length is 13 inches

**Q: Can you trim these?**
A: you could score them with an Xacto knife / box cutter MANY times - HARD plastic - then break off what you don't want
