While cooking, it has a very unusual smell, but that is completely normal for sella rice. The odor comes from the processing, because sella rice is boiled while the husks are still on. Then it is dried, and the bran and husk are removed. With other rice, the husk would be removed before the parboiling step. This process makes sella rice acquire its odor because sulfides are transferred from the husk to the germ. Most of the smell goes away after it is cooked, but some of it will remain, which adds to the overall good taste. Some people will find this odor to be gross, but it's all in their head. They think something is wrong with the rice, and they don't know that it is normal for sella rice to smell and taste that way.This rice is not sticky, and the rice grains remain separate. I wash the rice a few times and let it soak for at least 2 hours and rinse it again before cooking it. I like a pinch of saffron in my rice, which I add to the boiling water.
