But once you get it, it out performs, cast iron, carbon, etc. Lots of people are jumping on the "you can season your SS". Although it does work, its a complete waste of time and unnecessary. Once u learn to use SS properly, food will not stick and clean up is a breeze. Good luck and dont give up! **Q: How does this pan compare to the 4112? Description sounds very similar but this price is much lower (with a lid.) Just because of sale?** A: I called Allclad and they said the only difference is that the 41126 comes with a lid. The discrepancy in the height measurement is because the 4112 listing measures to the top of the handle while the 41126 listing measures only to the top of the pan. The rep at Allclad assured me that the pans are identical and that the promo price wouldn't last forever. **Q: Is this 18/10 stainless, 304 surgical stainless, or 316 surgical stainless?** A: In all of my research before purchasing my All-Clad I have not come across the use of 304 or 316 surgical stainless, only 18/10. The Tri-ply cookware line that I have purchased (from Amazon and elsewhere) features a 3-ply design, 18/10 steel cooking surfaces, aluminum cores for the even heating, and the highly polished exterior 18/0 stainless for lasting beauty and induction compatibility. Wow this 10 piece D3 set is stunning to look at and phenomenal to cook with, Its true about the fond you get after searing/frying you attain to make fantastic gravy's. We splurged after buying a new induction range so we could see what all the fuss was about, and my wife and I are very happy with both the precise control of temperature you get with these D3 pans/pots and the heft and thickness. along with the incredibly quick heat up time of the new Induction range, both as a combo are a dream. Clean up is easy, but the first few times I was worried as the fond and bottoms accumulate alot of discoloration after cooking, but it all comes off very easily under hot water and dish soap with a sponge. We would highly recommend this set. -2year Update- 3 layer frypan does not cut it on an induction cooker. our 10inch has warped and Allclad does not warranty warpage. Had to replace with a competitors 5 play which has performed much better. Beware 3 play anything on induction. We learned the hard(Expensive) way that you need 5 play on Induction cooktops.
